I'm making quince jam today - I started yesterday with the dicing of the quince. Lemme tell you cutting up 2+ kilos of quince is a time consuming endeavor. It took HOURS. I was remembering my Uzbek neighbors and how all the girls would gather round and help cook - this stuff necessitates either a large family or a lot of time. My wrist is still sore from the slicing.
But the quince is on to boil, hopefully in an hour or so it will be ready to can.
dryadsidhe, this is my last jam project in this state, would you like my spare canning jars?
