grated beet and fruit salad!

I made yummy out of thin air! I don't invent recipes often, but an acquaintance told me about using grated raw beets in a salad months ago, and I went to the farmers' market after yoga today and there were the most perfect little yellow/orange beets calling to me.

So I made up a little salad recipe for myself:

1 small bunch yellow beets, scrubbed and grated
1 apple, peeled and grated
1/4 of an onion, grated

Add to the grated stuff:
juice of 1 large lemon
juice of 2 navel oranges
a squirt of honey
a few splashes of cloudberry vinegar (courtesy of [livejournal.com profile] nisaa, [livejournal.com profile] stevefava, and [livejournal.com profile] joedecker -- I'd guess that some other vinegar would also work)
a handful of dried cranberries

Nom Nom Nom Nom Nom Nom Nom!!!!!

My lunch consisted of this, roasted brussel sprouts, and 2 squares of organic chocolate...tough life, let me tell ya.

yum! I'm going to make that, I love all the ingredients.

I bought a couple wonderful uppity vinegars last year, at the LA Greek Festival. It doesn't take more than 1/2 tsp of Cassis Basalmic Vinegar to put me in my happy place :)

ps: Brussels sprouts! yum!

uppity vinegars are almost as much fun as uppity oils :) Let me know what you think of the recipe. I'm proud of the hint of beetiness in it that manages to not be overwhelming (I think the yellow beets help that).
