yummy quick lunch

I usually like to bring leftovers to the office for lunch when I have to stay here after class. I made soup a few nights ago and didn't have any leftovers to carry with me. (And yes, food on campus really is so far away that it isn't feasible most of the time--it's one of the hazards of living and teaching in paradise).
This morning as I was rushing out the door I realized that I would need lunch and had nothing leftover in the fridge. I did however have:
part of a tube of ready-made polenta
an open jar of tomato sauce
frozen fake meatballs
frozen spinach.
I bunged all 4 into a container and brought it along to school with me.
After 2 minutes in the microwave, it really was delicious and very filling! I'm going to have to remember to make sure that I have these four ingredients on hand for quick meals when I need them. It was balanced and healthy, and didn't seem to suffer from being half-refrigerated, half-frozen, all-microwaved ingredients.
